THE INCREDIBLY SCRUMMIE BOOK OF VEGGIE SOUPS

 

 

CREAM OF ONION SOUP

I lb of onions sliced.
I and a half lb of potato's peeled and cut into biggish chunks (inch cubes).
Level teaspoon of dried rosemary.
3 pints of water.
1 and a half teaspoons of sea salt.
Level teaspoon of black pepper.
2 tablespoons of olive oil (okay, any vegetable oil you like).
I heaped tablespoon of dried skimmed milk (or 4 tablespoons of evaporated milk).

 

METHOD

Fry onions in the oil till softish. Add water, salt and rosemary. Bring to the boil. Simmer for 20 minutes.
Add potatoes and simmer for further 20 minutes. Make milk powder into a watery paste as it's likely to lump, and who wants lumpy soup! (or add 4 tablespoons of evaporated milk, which I prefer). Simmer further 5 minutes.

 

SERVES 4-5
