THE INCREDIBLY SCRUMMIE BOOK OF VEGGIE SOUPS

 

 

QUEN'S QUICK SOUP
(This recipe is by my nephew Quenton Cole)

I lb of parsnips very fines chopped.
2 lb of onions very finely chopped.
Half a lb of red split lentils.
2 teaspoons of sea salt.
3 cloves of garlic finely chopped.
2 and a half pints of water.
I tablespoon of olive oil (Quen also likes olive oil).

 
METHOD

Fry onions and garlic in oil till softish. Add water and salt. Bring to boil and throw in lentils and parsnips. Simmer for 30 minutes. Soup is ready.

 

SERVES 4
