THE INCREDIBLY SCRUMMIE BOOK OF VEGGIE SOUPS
CREAM OF BUTTER BEAN SOUP (Lima bean)
2 and a half pints of water (my favourite amount of water).
Three quarters of a lb of chopped onions.
2 tablespoons of olive oil. (I like olive oil. Okay?)
I and a half teaspoons of sea salt.
Level teaspoon of dried thyme. (Handful of fresh)
Half a lb of butter beans soaked over night.
METHOD
Fry onions until softish in the oil. Add water and herbs. Bring to boil. Throw in butter beans and simmer for 1 hour. Then scoop out about one third of the butter beans and put to one side (left or right, it doesn't matter).
Put the rest of the soup through the blender (hand blender comes in very handy in these days of soup).
Then add the whole beans and then the salt and simmer further 5 minutes.
SERVES 4-5
