THE INCREDIBLY SCRUMMIE BOOK OF VEGGIE SOUPS
LEMON AND GINGER SOUP
I lb of onions finely chopped.
2 Tablespoons of Olive oil.
I small lemon halved.
6 oz of red split lentils.
1 and a half teaspoons of sea salt.
1 level teaspoon of ground ginger (or half ounce of finely chopped fresh ginger)
2 and a half pints of water.
METHOD
Fry onions until softish in the olive oil (''Tell me something new'' I hear you scream)
Add the water, lemon, salt and lentils. Bring to the boil. Then add the ginger. Simmer for 40 minutes. That's it.
Isn't making soup a doddle?
