THE INCREDIBLY SCRUMMIE BOOK OF VEGGIE SOUPS

 

 

INCREDIBLE HEAVY PEA AND RICE SOUP

3 PINTS OF WATER.
Half a lb of marrow fat peas soaked over night.
3 ounces of short grain brown rice (long will do).
3 quarters of a lb of finely chopped onions.
Half a lb of finely chopped carrots.
2 teaspoons of sea salt.
I teaspoonful of dried mint (or handful of fresh
   finely chopped).

 

METHOD

Chuck everything in the pot except the salt. Bring to the boil and simmer for 50 minutes. Add salt and simmer for a further 10 minutes.

 

SERVES 4

 

CAUTION: This soup carries a warning: Do NOT go into a confined space, such as a lift, with a person who has recently eaten the above soup. Worse still, keep this person away from naked flames!
