THE INCREDIBLY SCRUMMIE BOOK OF VEGGIE SOUPS
CREAM OF CELERY SOUP
3 quarters of a lb of chopped onions.
3 quarters of a lb of finely chopped celery.
3 pints of water.
Half a teaspoon ground green or black pepper (or
half and half).
2 teaspoons of sea salt.
3 tablespoons evaporated milk (or more - up to you).
I teaspoon of demerara sugar.
METHOD
Bring water to the boil. Chuck everything in except milk and simmer for half an hour. Then add milk and simmer for further 15 minutes.
OPTIONAL
You could add a thickener if you prefer. I heaped tablespoon of corn flour mixed with a little water then stirred into soup.
