THE INCREDIBLY SCRUMMIE BOOK OF VEGGIE SOUPS

 

 

LEEK AND POTATO SOUP

2 and a half pints of water.
3 quarters of a lb of finely chopped onions.
1 lb of leeks coarsely chopped.
3 tablespoons of olive oil.
2 teaspoons of sea salt.
1 teaspoonful of dried sage (use fresh. But be careful
   as it's pretty strong in flavour!).
3 quarters of a lb of potatoes chopped into inch cubes
   (or there about).
1 level teaspoon of ground black pepper.
Just under a half a pint of evaporated milk.

 

METHOD

Heat oil and add onions. Fry till softish. Add water and leeks plus herbs and the salt and pepper. Bring to the boil and simmer for half an hour. Then add potatoes and evaporated milk. Simmer for further 20 minutes.
