THE INCREDIBLY SCRUMMIE BOOK OF VEGGIE SOUPS
SWEET AND SOUR THREE BEAN SOUP
3 pints of water.
1 half lb of equally split: aduki, pinto and
blackeye beans, soaked over night.
2 cloves of garlic chopped or crushed.
1 half lb chopped leeks.
I half lb of carrots diced.
2 teaspoons of naughty monosodium glutamate (not essential but it helps!)
2 tablespoons of soy sauce.
I level teaspoon of ground ginger.
2 tablespoons of cider vinegar. (Malt?)
I level teaspoon of sea salt.
1 teaspoonful of demerara sugar.
METHOD
Prepare veg (obviously). Bring water to the boil. Throw everything into the pot except the vinegar. Simmer for 1 and a quarter hours. Then add vinegar and serve.
